A concession holder (American English), snack stall or snack bar (English English, Irish English) is a place where customers can buy snacks or food at theaters, amusement parks, faires, stadiums, beaches, swimming pools, concerts, sporting events or other entertainment venues. Some events or places contract the right to sell food to a third party. The contract is often referred to as a concession - hence the name to stand where the food is sold. Usually the prices of goods in concession stands are greater than elsewhere for convenience as they are close to attractions, with outside food and beverages outside, and they often contribute significant revenue to venue operators (especially in the case of cinemas).

History

The concession outlets were originally not operated by the cinema, and food was often sold by people who attended the movie or by vendors outside the theater.

Theaters initially hostile to food at their facilities, but during the Great Depression, the theater added a standing concession as a way to increase income in a stagnant economy. In the 1930s, standing concessions were the main fixture in many theaters. During World War II, the rare candy in the concession stood because the sugar rationing took place at the time, and popcorn became more popular than before.

In the late 1940s, and early 1950s, when movie ticket sales declined, food sales in the concession increased. In the US the concessionaire is represented by the National Association of Concessionaires and the National Independent Concessionaires Association.

Food type

Concessions usually sell junk food. The most basic concessions in theaters include candy, popcorn, and soft drinks. Larger concession facilities in newer stadiums, amusement parks and cinemas have allowed the sale of limited-choice fast food, including grill and hotplate stations to prepare hot food (hamburgers, French fries, pizza, hot dogs, corn dogs, nachos, pretzels, snow cones, slushies, cotton candy, and churros), and freezers to store cold desserts (snow cones and ice cream). Sports stadiums/arena arena concerts and rocks sell beer and other light alcoholic beverages, usually in disposable plastic cups because glass bottles can be used as projectiles by non-compliant viewers. Formal entertainment venues such as symphony concert halls and opera houses often keep fast food and junk food for upscale food, including wine, coffee and tea, baked desserts and pastries.

While the above are the most popular common staples in concession stands, there are often regionally specific variations. For example, Citizens Bank Park has a Philadelphia-style food stall, including some serving cheesesteaks, hoagies, and other regional specialties. Busch Stadium includes the rugged standard fare such as bratwurst, nachos and beans, but also has a favorite St. Louis-area like pork steak sandwich and grilled ravioli; The unique Busch Stadium also allows outside food and beverages (including soft-sided soft drinkers).

The concourse of many of the newer arenas now includes some standing concessions that essentially form the food court, serving a variety of fast food. The modern stadium also includes many toaster stations and soda fountains, bars, cafes and restaurants. Club seating and luxury boxes have exclusive access to upscale restaurants, cafes, bars and catering not available for regular ticketholder.

At temporary outdoor events such as fairs, food trucks can operate as concessions.

Concessions are often contracted out to third parties, including major fast food chains.

Legends Hospitality Management LLC (Yankee Stadium and Cowboys Stadium) and Delaware North (TD Garden and Emirates Stadium) is a company that specializes in stadium catering. Alternatively, a concession stand can be operated by a fast-food chain such as McDonald's, Pizza Pizza, or Tim Hortons.
